| The parts of the rooster |
For the elaboration of the wet flies the pens of the
kidney of the rooster are used. Next to the pens of the kidney
are those of the hanging part, that are of inferior quality.
Twelve pens are what mallet is denominated. The number of
mallets that are obtained from a rooster varies according to the age
of the same one. As of the fourth year they have less amount of
pens. Also the amount on pen that a rooster gives depends of the
time in which peel the rooster (in spring they sour much and most of the pens
spoil). In general the roosters can give, in the best
conditions, 6 or 7 mallets of kidney part and 3 or 4 mallets
of hanging part.
First peeling is done to them when they are 6 months old; to
this it is called the clean. The quality of the pen is
selected by the work that has the pen, the brightness, the refinement,
the texture and the openwork of all these characteristics in the
misfortune of the same one. The optimal quality of the pen is
obtained when the rooster has between 2 and 3 years.

| The process |
In order to peel the rooster the craftsman ties the
legs to the rooster, he sit and he holds the legs to rooster between his
legs. With the right hand the pens of one in one are taken,
whereas with the yolk of a left finger the base of the pen for this
way not damaging to them is pressed.
Aafter peeling the rooster the bare zone ash
with olive oil mixed with walnut. They themselves

made in declining moon and every two months and means.
